{"id":120088,"date":"2024-11-26T10:09:42","date_gmt":"2024-11-26T18:09:42","guid":{"rendered":"https:\/\/www.sonomamag.com\/?p=120088"},"modified":"2024-12-27T12:03:55","modified_gmt":"2024-12-27T20:03:55","slug":"michelin-ambitions-for-new-sonoma-restaurant-enclos","status":"publish","type":"post","link":"https:\/\/www.sonomamag.com\/michelin-ambitions-for-new-sonoma-restaurant-enclos\/","title":{"rendered":"Michelin Ambitions for New Sonoma Restaurant Enclos"},"content":{"rendered":"<p>It&#8217;s been 15 months since chef Brian Limoges arrived in Sonoma as the executive chef of <a href=\"https:\/\/www.sonomamag.com\/sonoma-winery-to-launch-ambitious-new-restaurant\/\">Enclos<\/a>, an exceedingly ambitious fine dining restaurant expected to open Dec. 5.<\/p>\n<p>The celebrated alum of Atelier Crenn, Quince and Birdsong in San Francisco \u2014 all Michelin-starred restaurants \u2014 has been immersing himself, quite literally, in the flora and fauna of his new home.<\/p>\n<p>Eight-mile early morning hikes through the 98-acre Montini Open Space Preserve near Limoges\u2019 home have provided ample opportunities for forest bathing among fields of oat grass, lichen-covered live oaks and groups of mule deer. (Adahlia Cole)<\/figcaption><\/figure>\n<p>The new restaurant, housed in a renovated 1880s Victorian home in downtown Sonoma, is an extension of Stone Edge Farm Estate Vineyards &amp; Winery, owned by Mac and Leslie McQuown. With just 12 tables, it&#8217;s a restaurant and private wine tasting experience hybrid.<\/p>\n<p>&#8220;When I was thinking of the restaurant&#8217;s cuisine and using those (outdoor) experiences, I wanted it to be about that. (Adahlia Cole \/ Courtesy Enclos)<\/figcaption><\/figure>\n<p>Limoges, who grew up in a New Hampshire town of 14,000, said coming to Sonoma is a kind of bookend to his culinary career after working in big cities.<\/p>\n<p>&#8220;It felt natural to be here. I was drawn back to nature, and there&#8217;s a lot of serendipity in this opportunity to be here,&#8221; said Limoges.<\/p>\n<p>Already, there&#8217;s talk about Michelin ambitions for the sleepy town of Sonoma, which currently has no Michelin stars, unlike tonier Healdsburg or nearby Napa Valley.
